Shiitake Mushroom Expansion & Season Extension

The Littmans are increasing their mushroom production during summer months and extending their production season with the construction of a cold frame. They are repairing a barn to create covered space for their logs, expanding the existing irrigation system, constructing one additional cold frame hoop house with a shade cloth for extended production, and harvesting and inoculating additional logs.
The Littmans aim to meet the high demand for the product, with requests from chefs, market shoppers and wholesalers. They currently have relationships with restaurants Curras Dom, Savoy, The Market Place and Grovewood Café and also include mushrooms in their CSA share.
